Stir-fried Greens with pine nuts


Spicy Stir-fried Greens with nuts

2 cups of  dark leafy greens - choose spinach/collard/ turnip/ swiss chard or kale

 1 Tbs oil( olive, coconut or veggie oil)
1/4 cup chopped  leeks or  onion
2-3 cloves garlic, minced
 1/4 cup nuts, (pine nuts, sliced almonds,  pecans or walnuts)
 1/2 - 1 Tbs chopped hot pepper ( jalepeno, fresno) or  1/2 - 1 tsp  dried red pepper flakes  
 1 Tbs balsamic vinegar


Cut or pull  greens away from stems. Slice into thin ribbons. Chop onion, mince garlic.
Heat oil in skillet  over medium heat. 
Add onion and garlic and saute until translucent. 
Add greens  and nuts stirring frequently. Cook for about 5 minutes until greens are bright in color. 
Add hot pepper to balsamic vinegar and toss greens before serving.
