To make a monthly meal plan start by taking inventory of what food you already have in the freezer or pantry and try to use those in your meal plans.
Try to plan ahead to make two meals out of one - to make use of leftovers and save time .
- Leftover Rice + veggies & eggs = fried rice
- Roast chicken = chicken salad
- Leftovers + broth = soup
- Leftovers + tortillas =wraps, quesadilla, tacos or burritos
- Left over veggies + eggs & cheese = frittata or quiche
For example: Sunday I might roast chicken and serve with a vegetable and rice
- use the chicken and vegetables for a pot pie
- Use the rice in veggie burgers
- We have Pizza just about every week
- and we have one night that is "serve yourself" or "snack dinner"
