Fritatta

This is one of my favorite recipes to cook when I don't know what to cook.
The word frittata is Italian and roughly translates to "omelette" 
Traditionally its cooked in a cast iron fry pan and is started on the stove top and finished in the oven, but if you have a lid for the fry pan it can finish on the stove top.  

 It goes together quickly, its good hot or cold, and I can use up and throw in what ever veggies or protein I have on hand.  And I can use the left overs for breakfast, lunch or dinner!  


 

Ingredients 
 5-8 eggs 
 2-3 cups of veggies
1/2- 1 cup of cheese 
 Olive oil 


 Mix eggs together with a fork in small bowl  set aside 
Heat skillet over medium heat.  
 Add olive oil spread to coat 
Add veggies and cook for 5-10 minutes (- may have to drain fresh veggies before adding egg- just dont want veggies and pan to be too wet  before adding eggs ) 
Add eggs and gently shake pan to evenly distribute. 
Top with cheese , and place in 350 oven for 20-25 minutes until eggs are set and cheese just begins to brown. 

Here are some my usual  veggie choices:
potatoes thinly sliced - left over or uncooked, onion, leek, garlic, scallion, chive, mushrooms, spinach, tomato, broccoli, green pepper, kale, asparagus, chick peas, zucchini 

Cheese choices cheddar, swiss, or feta
