nightshade free Cherry burbon BBQ sauce

1 medium onion sliced thin
4 cloves garlic diced
1 apple chopped
1 cup chopped carrots
2 cups cherries
1/2 cup burbon
3 TBS balsamic vinegar
2 tsp smoked salt
1/4 tsp cloves
1 tsp dijon mustard
3 TBS brown sugar
2 TBS coconut oil


Saute thinly sliced onion in 2 TBS coconut oil and 1 TBS of brown sugar. When onions are golden brown, add carrots,  cherries, chopped apple and garlic. Continue stirring until the garlic is translucent. Add burbon and  2TBS of brown sugar. Reduce heat to low. Cover and Simmer until apple and carrots are tender. - about 10-15 minutes.  Remove lid and stir until the liquid thickens into a syrup. Remove from heat to Cool.

While the apple mixture is cooling add to blender or food processor:
balsamic vinegar
dijon mustard
molasses
smoked salt
cloves

WHen mixture is cool add fruit and veggie mixture to food processor or blender and blend until smooth.
