blackened salmon

1 Tb molasses 
2 tbs paprika 
1/2-  to 1 tsp cayenne pepper 
1 teaspoons kosher salt 
1/2 teaspoon ground white pepper 
1/2 teaspoon ground black pepper
 1/4 teaspoon dried thyme 
1/4 teaspoon dried basil 
1/4 cup butter - divided 

 Coat fish with molasses and Marinate for several hours - to overnight.

 In a small bowl, mix paprika, cayenne pepper, onion, salt, white pepper, black pepper, thyme, basil and oregano. 

Brush salmon fillets on both sides with 1/8 cup melted butter, and sprinkle evenly with the cayenne pepper mixture. 

 In a large, heavy skillet over high heat, cook salmon, butter side down, until blackened, 2 to 5 minutes. Turn fillets, drizzle with remaining 1/8 cup butter, and continue cooking until blackened and fish is easily flaked with a fork.\ 

OR wrap in foil after sprinkling with pepper mixture place in foil with pats of butter on top and bottom - cook on grill .
 turn over half way through cooking time - grill until fish is done - 6-8 minutes per side.
