Pumpkin pie for 1

 Pumpkin Pie 


Ingredients:

1/3 cup pumpkin puree

3 Tbs cup heavy cream

1 egg

2 Tbs Brown sugar

3/4 tsp Pumpkin Spice OR 

1/2 teaspoon cinnamon and  1/4 tsp of ginger and 1/4 tsp cloves) 

2 tbs Graham cracker or animal cracker crumbles

Tsp of butter


( crust is Optional), 

For Crust  melt 1 tsp butter in the microwave safe mug you will cook your pie in. Add and mix 2 TBs of graham cracker crumbles or 2-3 animal cracker crumbs with a fork. Set aside.


In a small mixing bowl or a 2 cup pyrex measuring cup Mix pie ingredients together than pour into mug.

Cook for  2- 2/12 minutes, but stop and check it at 30 second intervals. (Cook time may vary due to microwave power and container used to cook in. Pie is done when it starts to pull away from the sides and an inserted toothpick can removed clean) Cool in the refrigerator for at least 20 minutes. You can remove the pie from the mug and put on a plate - or eat from the mug. Top with whipped cream, and caramel syrup / sauce if you have it.
