chicken pojarski

 1/4 lb mushrooms - slice half, dice half

2 whole chicken boneless chicken breasts

1.5 cups bread crumbs

1 tbs grated onion

salt, pepper

1 egg

2 Tbs flour

4 Tbs butter

4 med celery stalks chopped into matchstick size

1 cup half and half


Slice half mushrooms, mince the rest.


Mince chicken using food processor or chop finely

In large bowl using fork, mix chicken mushrooms, bread crumbs, onion, pepper, salt, egg and shape into oval patties.

Place flour on parchment or wax paper and coat the patties. 

In a 12 inch skillet over med heat, melt 1 Tbs butter and cook celery until crisp. Remove and set aside

Heat 3 Tbs butter and cook chicken patties 10 minutes each side. 

Add half and half to skillet to loosen browned bits on bottom of pan. 

Place patties on celery, spoon sauce over the patties.
